Mama Tip Tuesday! Easy Vanilla Bean Banana Muffins

It's back to school for many kiddos!
Are you pulling your hair out yet or maybe getting a few greys?
My hair seems to shoot greys out more and more this time of year. It's not easy getting kids out the door especially on a time crunch! Sometimes we have to grab something for in the car and these banana beauties are a lifesaver! They are fantastic to make the night before and are yummy cold!

Here's the recipe to help a fellow busy back to school mama out!

 You can use any white cake mix for this recipe, but I have a love affair with Krusteaz!

Vanilla Bean Banana Muffins
● 1 pouch of Vanilla bean cake mix
● 3 ripe bananas
● 1 egg
● chocolate chips or nuts (optional)

Preheat oven to 350. Mash bananas (I just threw mine in the KitchenAid mixer,and let it mash them). Add the egg. Then add in the cake mix. This is where you could add chocolate chips or nuts. Blend well and spoon into a prepared muffin tin. Cook for 18-20 minutes.

Let cool. This cake mix came with a frosting mix which is powdered sugar. I used it to make a glaze and drizzled on the cooled muffins. 

Vanilla Glaze
● 1/2 tsp vanilla
● 1-2 tbps milk
● 1 tsp butter softened
● 2 cups powered sugar or frosting mix
